For us Venetians, and not only for us, wine has always been an element of nourishment but also of celebration and sharing. Our story is simple, based on desire to explore and celebrate this precious combination of pleasure and research.

Today we want to realize with a limited production of DOCG sparkling wines that brings us back to our roots and to those simple but extraordinary moments that are part of our daily life and we want to share them with you.

Asolo Prosecco Superiore DOCG Extra Dry Bubbly wine

Asolo Prosecco is a hilly area in the heart of the province of Treviso, close to the Montello forest and the Dolomites. The soil, clayey and rich in minerals, and the particular exposure of the hills give the wines of this area the characteristics that make it appreciated all over the world.

Since 2019 Asolo Prosecco has been DOCG "Controlled and Guaranteed Designation of Origin", a mark synonymous with guarantee of the origin and quality of these sparkling wines.

Pale straw yellow in color and with an impeccable clarity rich in an incessant perlage, it has an intensely fruity aroma reminiscent of golden apple and acacia flowers. Its taste is savory, pleasantly lean, light in alcohol.

This wine was produced with the Charmat method. The grapes were harvested late to allow the development of concentrated aromas.

Once in the cellar, the grapes were cold fermented in stainless steel tanks at a controlled temperature until reaching 10% alcohol content. The wine was then transferred to temperature-controlled pressurized stainless steel tanks and the addition of yeasts and sugars started a second fermentation under pressure for 30 days.

The CO2 generated by this second fermentation dissolved in the wine making it sparkling. The wine is sterile bottled by microfiltration under pressure to preserve the right level of dissolved CO2.

Ideal for an apéritif and paired, for example, with crustaceans and shellfish starters or with seafood-based first courses, perfect with legume and fish soups, pasta with delicate meat sauces, fresh cheeses and white meats.

Natural sparkling wine with intense and delicate aromas, pale pink and slightly orange in color. On the nose, Prosecco Rosé has aromas of green apple, blackberry and currant and a delicate floral touch. On the palate it is fresh, with predominant fruity notes, and the small percentage of Raboso red grapes gives the aftertaste a pleasant note of roundness.

The fruits of this wine come from the vineyards of Caerano di San Marco, a small town in the province of Treviso, located on a slope facing south-west at 100 meters above sea level. The soil here is clayey and rich in iron. The Glera vines are 13 years old while the Pinot Noir vines are on average 20 years old and all pruned with double Guyot.

The grapes are carefully selected by hand during the harvest. The whole bunches are gently pressed with a pneumatic press. Then a carbonic pre maceration of 3/4 days takes place followed by a traditional red maceration for 2 days. The must ferments in stainless steel tanks from 30 to 100 Hl. The second fermentation takes place in stainless steel autoclaves from 30 to 100 Hl. Finally, the refinement is carried out in concrete wine vessels

Pairings
Great apéritif. This elegant rosé is excellent when combined with spicy foods, and it favors the exotic character. Also interesting combination with fish soups with tomato.
